Yeasterday I had a date with my city – Helsinki has been my home now for one month. I never thought I would be a big city girl, but after Italy I have realized, that there is no return to the country side anymore for me. Well, at least for now. So yesterday I took my new camera (posting later about this) and walked few hours around the city. I had my new super glittery shoes on and leather skirt I just found from the sales. Somehow I felt amazing with my new outfit, the summer city felt amazing and over all the life felt pretty amazing!
One of my new years resolutions was to eat more veggies this year, and as I am not planning to add just more salad in my diet I have to start testing new recipes. It is same time exiting and inspiring as I love testing new ideas and I feel that sometimes you are too much eating the same favorites week after week. So as hubby had to go back to Italy yesterday I decided to spend little time in the kitchen to take my mind off from the sad feelings.
I chose from the amazing VEGE! -cooking book few recipes I want to try and went to get all the ingredients for the upcoming week. The first recipe I decided to try was falafel and I have to say I have found a new favorite! It was the first time ever in my life I made these and also first time to eat these so I can`t make comparison, but i absolutely loved them. They were so easy to make, spicy enough and I could combine it with one of my favorites; tzatziki.
Falafel with tzatziki
- 250 g chick beans
- 1 tbs of cumin (juustokumina)
- 1 tbs of coriander
- 1 tbs paprika
- little pit chili
- 1 tsp salt
- half onion (chopped)
- 1 garlic clove (mashed)
- parsley (chopped)
- 2 tbs wheat flour
- 3 & 1/2 tbs olive oil
- 3 garlic cloves (mashed)
- 250g Turkish yogurt
- half a cucumber
FIRST mash dried chick beans (I used the ready cooked ones from a tin) and then add all other ingredients expect the olive oil.
WHEN you have mixed all the ingredients into a smooth mix add the olive oil and mix it up one more time.
HEAT the oven in to 200 C degrees and cover oven proofed dish with a little olive oil.
MAKE from the mix small balls and place them in to the dish.
BAKE falafels in the oven 30 minutes. It is good to turn them after 15 minutes.
When the falafels are in the oven you can make the tzatziki.
GRATE the cucumber and press some of the juice out so it is not making the tzatziki too wet.
ADD mashed garlic, salt and the yogurt. MIX it smooth.

I have one especially week point when it comes to eating; cheese, biscuits and jams with a good class of red wine. I could literally only live with good combination of brie, fig jam and biscuits. Unfortunately in a long term this is not the best diet, so I have to keep myself in control and not eat these treats too often. But lucky me, the season of treats and sweets is now, so I can spend evening or two with my favorite treats.
Like said fig jam is probably my all time favorite, but this year I got the possibility to taste also some new surprising combination. My friend brought to one Christmas party these Nicolas Vahé confits and I have to say my traditional fig jam has got some serious competition.
Nicolas Vahé is know from not only good tasting, but also very good looking products. These confits are a nice substitute for traditional jam as they are less sweet and more intense with flavor. I like how the traditional tastes have been taken into another lever by combining simple flavors with something little unusual. Who would thought that apricot can taste so good with garlic or fig with balsamico?
I have to say we all should try more often new things and get positively surprised. So maybe next time with the cheese you try these, or some of the other amazing tastes there are available. And these would make also a pretty nice gift don`t you think? You can find these at least from the amazing Cobello, but for sure in other stores also.
