My kind of carrot cake

Carrot cake, who does not love it? It has always been one of my favorites, and not least because in some way, it is tricking you to believe, that you are eating something healthy. Which of course in most of the cases is not even true, as the cake (lake most of the cakes) is full of sugar, white flour, butter and and and.. So I wanted to make a little better version of the classical carrot cake, but without taking it too far from the original. This cake is also super easy to make, just the kind of recipe you need when feeling lazy, but still want to bake something. A little grating, mixing and baking – easy!

I changed few classical ingredients into something I use alternatively in my kitchen. So example instead of butter I used coconut oil, white flour I changed into spelt flour and I also ended up cutting the amount of sugar a lot from normal. The classical carrot cake has many times a thick layer of icing in the top, but I wanted to balance the cake a little, so I cut the base into two and added some of the icing as a filling. To get more “naked cake” look, I also added some of the icing in the sides.

Carrot cake

Serves 8-10 // time 120 min.  // ø 23 cm cake tin

INGREDIENTS

Cake base

  • 400 g carrots
  • 4 eggs
  • 1 ½ dl coconut oil
  • 170 g cane sugar
  • 200 g spelt flour
  • 50 g almond crush
  • 20 ml baking powder
  • 10 ml cinnamon
  • 5 ml cardamom
  • 5 ml ginger
  • 1 organic orange (juice and grated peel)

Filling / Icing

  • 300 g cream cheese
  • 15 ml honey
  • one organic orange (juice and grated peel)
  • 50 g almond crush

METHOD

PREHEAT the oven into 150 degrees (C)

GRATE peeled carrots

MELT the coconut oil

MIX all ingredients in a big bowl until the texture is smooth

GREASE cake tin with coconut oil  and add the dough

BAKE 50-50 minutes

LET COOL completely


MIX cream cheese, honey and orange juice as well as the grated peel

CUT the cake base into two

PLACE bottom part of the cake base on a plate and add half of the icing

ADD the second part of cake base

COVER the cake with the icing – more in the top and only a little amount to the sides

DECORATE with grated orange peel and almond crush

ENJOY!

Apple cinnamon pumpkin soup

Hi there – long time no see! We had end of our first course with HUGE projects, so I spend the last week working like crazy, and had no time to anything else. Buhuu, not nice! After that crazy week, I went to a small autumn holiday with Lady A, and spend all last week wondering around Luxembourg and Antwerp. I have almost 900 photos to go through from our trip, but little by little I will start sharing stories and tips from those two beautiful cities. But before that, I will share a recipe after a way too long time. My kitchen situation has improved from the beginning (thanks babe), so I have had finally the opportunity to test out new ideas in the kitchen, and spend time cooking. I can tell you, a lot more coming!

It should not be surprise to anyone that late autumn is THE pumpkin season. I have been seeing pumpkins in the supermarkets, social media, cooking shows and well, basically I feel they have been everywhere. So I decided that it is time to work with this delicious vegetable and I ended up buying few different pumpkins from the farmers market. I have loved roasted pumpkin soup for a long time, but this time I wanted to try a little new twist. I ended up adding cinnamon and apple to the soup, with coconut cream. This way I could still have the delicious roasted pumpkin taste, but with little softer tone as I think the apple and cinnamon nicely takes the pumpkin flavor little down.

Apple cinnamon pumpkin soup

Serves 4 // time 90 min. // dairy free

INGREDIENTS

  • 1,1 kg butternut squash
  • 3 apples ( ~300 g)
  • 2 carrots
  • 2 shallot onions
  • olive oil
  • 1,2 l water
  • 250 ml organic coconut milk
  • 45 ml organic vegetable bouillon powder
  • 3 cinnamon sticks
  • black pepper
  • salt
  • pumpkin seeds

METHOD

PREHEAT  the oven into 250 degrees (C)

CUT unpeeled butter squash into slices

PUT the pumpkin slices in a baking tray covered with baking paper, and pour a little olive oil over the pumpkin slices

ROAST in the oven for 40 minutes


PEEL and CUT the apples, carrots and onions into small pieces

PEEL warm pumpkin slices and cut into smaller pieces (I like to peel the pumpkin after roasting, and not when the pumpkin is raw, as then the skin comes much more easier out)

FRY first the onions, apples and carrots in a small amount of olive oil, until they start to be soft

ADD PUMPKIN pieces, water and bouillon powder

MIX well and add cinnamon sticks, salt and pepper

LET BOIL on low heat for 20 minutes

PUREE the mixture (I was using blender for this)

ADD coconut milk and stir until smooth

SERVE with pumpkin seeds and ENJOY!

The soups is amazingly good when you eat it simply with pumpkin seed and fresh bread. But you could also add some fried bacon to it, as the salty bacon gives a nice contrast to the soup. Also creamy yogurt could work well in the top, so there is version for everyone.

Best soy caffè latte in town

I know, that my life is going good when the biggest thing making me angry is paying extra for plant based milk in my caffè latte. Yeas, you heard me! I just cannot understand why I have to pay extra for plant based milk in year 2016. (Ok, I know from the industry point of view the costs, but still camoon people!) I cannot use dairy products daily, so if I am not drinking espresso, I am ordering my  cappuccino, caffè latte or caffè macchiato with plant based milk when ever it is possible. And 99% of the time, I am paying extra for a decision which is important to my health.

So imagine the situation when you go to a nice looking cafe place, order a caffè latte with soy milk, and they tell you that you don`t have to pay extra for it. Yeas, I have found one of the only places in Breda, where you don`t have to pay extra for your milk choice. But the best is yet to come, because this place also happens to serve the best damn soy milk caffè latte I have ever tasted in my life! And trust me, I have tasted many the past years. As a conclusion we could say, that if I ever go missing, In Kannen & Kruiken is the place where you should start looking. And hey, if you don`t feel like looking million photos of this amazing place, skip this one and come back later this week!

In Kannen & Kruiken is super lovely and cozy cafe place in the center of Breda. I have spend there already many delicious moments with friends, and alone. The place is perfect for just a chill out moment with your friends, but perfect also for working. The wifi works smoothly and you can sit outside in the garden or choose a table inside. The menu is like made for me, and I cannot think anything I would not eat (or drink) there. And if you love breakfast like I do, this is your place! Talk about those french toasts or over night outs, ou my. Even though the menu is filled with delicious and healthy choices, the prices will not kill your daily budget. I am so happy how good the price-quality balance is.

It should be now perfectly clear that the food, drinks and the place itself is fantastic. But I have to say that the service is also something why I want to go again and again to this place. The moment you walk in you feel welcome and you always leave with a smile on your face. I don`t remember too many places with similar service level, and I can see that the people really enjoy their work. As a Finn I have to say, that in the beginning it was a little confusing, when you are noticed so many timse during your stay, but now it just feel normal, something that should always happen. And I am not saying they are every five minutes asking how are you, they just make sure you have everything you need for a pleasant stay. A little extra smile never ruined a day did it?

I have never been a huge fan of yellow but this place somehow makes me want to have one yellow detail in my home. And I love the wall full of cross-stitch art, funny!

How much I would pay for this cafe right now! I got food poisoning few days a go, and haven`t drink cafe in four days. For a person who normally drinks 3-4 cups a day, it is devastating. Hahah, told you the life is going good as the problems are this huge. But maybe tomorrow finally a good cup of cafe?
